Text Box: I source as much as possible locally. Most of the fruit comes fresh from Eddisbury Fruit Farm in Kelsall, Cheshire, though you will appreciate that when I need supplies out of season I have to buy frozen, or from other sources to meet demand. Also, unfortunately passionfruit, pineapple and blueberries do not grow in Cheshire so I have to source those from further afield. The most local ingredients of all are the sloes, elderberries and damsons which come from the trees and hedgerows of Mollington and the surrounding villages. The most important principle though is that nothing goes into the liqueurs other than FRUIT, SUGAR, ALCOHOL & TIME.
